These stuffed peppers are so good you’ve just got to try them. The recipe was passed down from a friend and was shared with everyone who had tried them..which means it’s a great recipe! Anytime a recipe is shared you can assume it’s a winner, and that’s totally true for these gorgeous stuffed peppers!
These veggie stuffed quinoa peppers are loaded with zucchini, eggplant, onion, garlic, spinach, and basil. Adding the quinoa makes the peppers dinner worthy by filling your tummy up! You can still choose to have these as a meal or an appetizer. The hubby ate two for dinner, but just one half was enough to fill me up. Annie ate the other half which I was pretty impressed with; for a two-year old she’s pretty opened minded about trying different veggies.
