A healthy chicken and Rice Casserole with Veggies, goes from skillet to pan and bakes for 40 minutes. Cooked with brown rice, chicken thighs, peas, carrots, pepper, and onions. A great family meal.
I am loving this Healthy Chicken and Rice Casserole with Veggies. It was the perfect dish to cheer me up after I lost a huge chunk of my eyelashes in a freak eyelash curling accident. I’m not really a makeup kind of gal. I wear a tad bit of eye liner and I religiously curl my eyelashes and then put on some mascara. Oh-and can’t forget the wrinkle cream! But today my old faithful curler malfunctioned and now I’m missing half of my eyelashes on my left eye. LOL! I mean you kind of just have to laugh about it! I just look a little ..odd. I need to Google “how long does it take for eyelashes to grow back”. I have a feeling it’s gonna be awhile.
So after the incident I removed myself away from the mirror and into the kitchen. It’s been waaay to long since I made a casserole. This one is my new fav!
