Delicious Strawberry Cheesecake Bites, super easy and so yummy. Each bite is a tiny piece of heaven, so creamy and sweet with a delicious graham cracker crust
I’ve been dreaming about these Strawberry Cheesecake Bites for a long, long time. I’ve actually woken up at 4am dreaming these little beauties and they were worth the sleepless nights #foodbloggerproblems . There was some stress here though. I was worried. I wanted a firm crust. Not to crumbly. I wanted to be able to peel back the cupcake wrapper and have a compact little treat. And after some trail and error…TA-DA! Here they are
The first time I tried to make the crust, it came out to thin and way to crumbly. What was a girl to do? Why add some more butter of course I had all the best intentions in keeping this low cal but in the end butter won. Butter always W I N S…And man is this Graham Cracker Crust good! Topped with a creamy, sweet cream cheese, cool whip topping and a fresh strawberry on top of course. Yum.
The key to getting a graham cracker crust is pressure. Lots and lots of pressure. I used a small glass cup and mashed the crust down as hard as I could. My arms started to hurt , so I counted that as my workout for the day. I even named the move…The Cheesecake Press. It’s super intense but well worth the yummy reward.
I also decided to bake the crusts for 10 minutes. After my crust crumbled the first time I was determined not to have a repeat. The extra butter and the baking worked out beautifully. Plus while you’re baking the crust you can be getting your yummy topping ready. I scooped the cheesecake mixture into a large piping bag with a 1M tip but if you don’t have a piping bag you can simply use a knife or an offset spatula to swirl the topping on …and it is a creamy piece of heaven.
Lets just say I didn’t share the extras with the kids. Not one lick. All mine. Mommies need treats too!
