Sliced and Roasted potatoes drizzled with butter and seasoned with salt, garlic, rosemary, parmesan and italian breadcrumbs. The perfect appetizer or side dish.
So I’m off my health kick. That lasted 2 days! To celebrate the end of my diet I decided to make these Sliced Roasted Potatoes. I also decided that I should dunk each delicious potato slice in sour cream. I didn’t even do light sour cream, full-fat all the way baby. And seriously guys, they tasted amazing. My hubby and I ate all 6 for dinner. On friday nights I like to do easy, snack-able meals.
The seasoning on these spuds is just perfect and the ingredients are most likely already in your pantry. The italian bread crumbs give these spuds a little crunch and the Parmesan cheese and the red pepper adds an additional kick. And of course I had to season them with rosemary. Every time I make potatoes I feel compelled to put rosemary on them. Like my Smashed Potatoes, and those yummy Rosemary Fries. I just love the smell and flavor of rosemary! Plus it’s my only herb that is still alive somehow in my back yard.
To make these Sliced Roasted Potatoes you first slice a tiny piece of the bottom of the potato so they sit flat. Then take two 1/4 inch dowels or two wooden spoons on either side of the potatoes. This keeps you from slicing all the way through the potato. Then brush with butter, season with salt and garlic powder, then into the oven they go! Make sure you slice your potatoes really thin, this ensures they cook through.
Right before I was about to put these in the oven I realized I had no aluminum foil. I searched through our camping stuff, and still NO aluminum foil! What the heck? We always have aluminum foil! So I had to knock on 3 of my neighbors doors to find someone home, to get some foil. Which led to a long conversation with my neighbor which meant I had to rush home to cook these and then photograph them before it got dark! #foodbloggerproblems

It was worth the trouble, because they came out PERFECT. You know something is a hit when the hubby says “WOW” after he takes his first bite! These potatoes are the best!
