The spring weather is here to stay and slaving over a hot stove is the last thing on my mind. We’ve been eating lots of salads, and grilling out of course! Our fave right now is a grilled chicken salad with these delicious roasted ranch chick peas added for a crunchy topping. It was love at first bite! What’s not to like about a chick pea with a nice crunch and some ranch seasoning? There’s no better way to add a little extra flavor to your salad. Plus these little guys are the perfect snack too!
I made several batches of these, each time using different levels of ranch seasoning. It sounds serious doesn’t it?! But nah it’s really not. The first batch was waaay to salty. I guess that’s what happens when you dump the entire envelope of ranch seasoning in. I still gobbled them up; once I dunked them in some more ranch they actually were quite good. After my 3rd try I’m going to recommend just a 1/2 tablespoon of ranch seasoning. That was just right. If you want to add more go for it! You really can’t go wrong.
Roast the chick peas for 30 to 35 minutes, until they are nice and crunchy. The best part is the crunch!
