Fresh Garlic Salsa, and lots of it! Salsa is an awesome snack or appetizer and it’s healthy. What you use to scoop the salsa up with may not be healthy but the actual salsa is really good for you! It’s packed with loads of fresh tomatoes, garlic, cilantro, lime, green pepper, onion and jalapeno.
In addition to making a good snack, this can also be tossed over some grilled chicken breast with brown rice, which is exactly what we had for dinner tonight! It turned into a yummy zesty sauce…so this fresh garlic salsa is versatile! It could also be eaten alongside the Avocado and Tomato Dip that I made last week…hmm.. it sounds like I just need a good excuse to eat chips. BUSTED.
I didn’t want my salsa to be overly processed so I used my little Cuisinart food processor for most of the ingredients, being careful not to turn the salsa into soup! To give the salsa a semi chunky texture I diced 2 of the tomatoes and then mixed it with the rest of the salsa. This looks very similar to the salsa you’ll see in some restaurants and it’s just as tasty. If you want to make your salsa chunkier, just dice all of the ingredients. If you want to add a little more zip add one or more jalapenos. I’m kind of a wimp when it comes to spice so I just added one.
