Crunchy Cheesy Avocado Nachos, Scoops Tortilla Chips filled with all that good stuff you love, avocado, cheese, and beans, plus butter soaked bread crumbs for the perfect crunch!
Who doesn’t like little pop-able bites of creamy avocado and cheesy yumminess? Exactly! Chips and cheese have been awesome since the beginning of time so I’m not trying to reinvent the wheel here, just making the ride a little smoother. Avocados are the best when it comes to being smooth. The creaminess just can’t be beat, plus there’s cheese and best of all buttery soaked Panko bread crumbs tossed on top, giving an extra kick to each heaping chip.
The breadcrumb idea came from some avocado recipes I’ve seen floating around. The avocado is sliced up, then dipped in flour and egg, then coated with breadcrumbs. Sounds good doesn’t it? I’m definitley going to be trying that soon but on this particular day I didn’t feel like messing with all that. But tossing some breadcrumbs on top sure did seem like a way to test the waters. It’s an amazzing combo for sure!
I made half of these with diced jalapenos and the other half without (for the kiddos). I loved both, but for those who can’t handle the added kick, just got without. These chips are awesome with or without the heat!
