It’s quick, and with the right food  you can still make a healthy nutritious meal in no time at all, like this Nuked Veggie Baked Potato, 20 minutes of microwaving and you’ve got a nice , healthy, filling, and comforting dinner. quinoa and Pea salad

I’m loving this healthy quinoa pea salad! It’s got all the good stuff for you could ask for; roasted nuts, peas, parsley, and some green onions tossed with a sweet honey vinaigrette dressing. The added crunch of the pecans makes this salad extra delish!

I’m pretty sure I will be eating this all week for lunch. I love having a meal like this ready to go. Lunch time is always chaos in our house and by the time I get the kiddos fed, I’m often left scrambling for something healthy to eat, or end up eating the crust of one of the kids PB&J’s {yuck}

Every have one of those happy days. the ones where you crank up the music super loud and dance with the kids like an idiot? Or do the same old boring house work with a pep in your step? The days where for one reason or another , you take a second and actually appreciate life?

I remember feeling this way quite a lot after I was cancer free and knew that I was going to be OKAY. It was such a great feeling , that unfortunately doesn’t come around as often. You get back to taking each day for granted and forgetting that each day is really, truly A GIFT.

When that happy to feeling comes along you’ve just got to soak it up. Today was one of those days; and I’m soaking it up.  Still have the same daily stressors but for some reason they don’t seem to matter…I’m sure tomorrow will be another story! Caramel FrappuccinoThis week is all about CARAMEL! Ever since I made those yummy Low-Fat Caramel Brownies I’ve had Caramel on the brain and stuck in-between my teeth! My dentist is going to hate me but my stomach is very happy at the moment. Drinking this Starbucks Caramel Frappuccino Copycat brings me back to when I would slurp one of these down after pulling an all-nighter studying for a final in college. There was a Starbucks right across the street from the library and I would always treat myself to one after finishing up whatever exam I was cramming for. I really should’ve been marching myself straight to bed but back then sleep was a waste of time; instead I needed to get ENERGY FAST Starbucks it was. Caramel Frappuccino   [Read more...]

These low-fat Caramel and Dark Chocolate Brownies will melt in your mouth! A perfect and easy sweet treat that everyone will love.

Low-Fat Caramel and Dark Chocolate Brownies This week I’m bringing the Sweet back to Sweet and DelishLow-fat Caramel Brownies are the perfect dessert for both Mom and the kids. I loaded these brownies with dark chocolate {for me} and drizzled on the rich caramel {for me and the kids}. Boy, oh boy, did it turn out fabulous. These brownies are great because they use a box mix, and have some lower fat ingredients so you don’t have to feel completely guilt-ridden eating them. Simply use a Pillsbury Devils food Cake Mix with Pudding, some fat-free or low-fat condensed milk, some caramel candies, and your choice of two Dark Chocolate bars. I usually alternate between Lindt and Ghirardelli;  I like the 70% Cacao. But go more bitter if you’d like. For me 70% is where it’s at. Low-Fat Caramel and Dark Chocolate Brownies [Read more...]
