I dreamed up this soup while waiting at the bus stop in the cold rain at 6:30 in the morning. Yes 6:30! school starts crazy early here, which works for us because we are early birds. I could do without the cold rain though..

Shivering and wet, I was thinking about how cold rainy days are perfect days for soup. I’ve been on a roll with the soup recipes lately, I just can’t stop myself. Now that fall is officially here I feel the need to cook as many cold weather foods as I can, and this Creamy Low-fat Potato Soup is the perfect cold weather meal. And it tastes even better the next day for leftovers..amazingly flavorfully delicious.

I made this Chocolate Chip Pumpkin Bread after getting reamed out today.  It was my therapy bread. And man, it sure did the trick; so rich, chocolatey and creamy!   I suppose I deserved to get yelled at. It just hasn’t happened in a while.  I’m the one doing the yelling these days… I’m not on the receiving end.

I had just dropped my son off at preschool and I figured Annie and I could go check out this lake down the road. I have been thinking about taking some pictures of the kids so I’ve been scouting out pretty spots. I found this cool area in a neighborhood with a little parking lot and a trail down to the lake. There’s a chill in the air so it’s time to start bustin out some casseroles. Get your sweatpants ready cause this one is a doozy. It’s not low-fat but it sure is tasty! I am a big fan of the 80/20 rule and this casserole definitely falls in that sinful 20% part of your diet…in fact wash this down with a cold beer like I did and you’ve used up all your points for the week. But This Chicken and Sausage Rice Casserole is soo worth it.

creamy tomato soup Two things happened this weekend that haven’t happened in a long, long time. I got to turn on the heat! And man was in cold for my southern wimpy bones. 39 degrees…whaaat? It’s just barely fall and we are already approaching freezing?!

Around here there doesn’t seem to be much open-window time. It goes from winter to summer in one week and then from summer to fall super fast. Which is fine by me.  I love the smell of the heat when it hasn’t been turned on for 8 months, it’s like something’s burning..but you know it’s not the house catching on fire. I try my best to treat my body good and most of the time I do. But when I’m living life old-school college style or on the road you’ll find me at McDonald’s scarfing down an egg sandwich {a sure cure for a hangover} or on a road trip from hell with the kids shoveling down some fries {helps block out the blood-curdling screams coming from the back}

Plus it’s the first weekend we’ve had in a long time where it will be cool enough to have a fire. My husband loves fires and built a fire pit in our backyard , so when the weather gets nice we love to grill out and then have a fire afterwards. I figured we could grill out and have some burgers and have this Zucchini and Squash Pesto Salad as the side.
