I’m still am amazed when I look in the rear view mirror of my minivan and see three kids looking back at me!! I get all verklempt when I see those cute, chubby cheeked faces staring back at me and think about how lucky I am to have my family.

It was the perfect dish to cheer me up after I lost a huge chunk of my eyelashes in a freak eyelash curling accident. I’m not really a makeup kind of gal. I wear a tad bit of eye liner and I religiously curl my eyelashes and then put on some mascara. Oh-and can’t forget the wrinkle cream! But today my old faithful curler malfunctioned and now I’m missing half of my eyelashes on my left eye. LOL! I mean you kind of just have to laugh about it! I just look a little ..odd. I need to Google “how long does it take for eyelashes to grow back”. I have a feeling it’s gonna be awhile.

So after the incident I removed myself away from the mirror and into the kitchen. It’s been waaay to long since I made a casserole. This one is my new fav!

Peanut Butter Cookie time guys! We literally have a 5 pound humungo jar of Peanut Butter at our house at all times. Without it we’d be lost. One of the first things my hubby does when he gets home is dunk a spoon in the peanut butter jar. My kids pretty much live on peanut butter and jelly sandwiches. So it was only natural that I revisit this classic Peanut Butter Cookie recipe my Mom makes; except this time I changed things up a bit. These are Whole White Wheat Peanut Butter Cookies with Ganache and are garnished with salty chopped peanuts. Yum-E.

Now that Halloween is over and Thanksgiving is only weeks away {can you believe it?} I’m feeling the need to clean up my act a bit. I’ve been sneaking pieces of candy from the kids Halloween stash every night, not to mention inhaling the Candy Corn Bark I made. So yeah, time to focus on some clean eating! This yummy Corn Salad with Apple Cider Dressing is a great side dish or a main meal. You can eat it hot or cold, your choice! And yes it’s a little Carb-O-Licious but the dressing is super light. Just 1 Tablespoon of olive oil and some apple cider vinegar. That’s it.

And don’t try to tell me that Potatoes and Corn don’t count as veggies, cause they totally are in my book. They are starchy vegetables and are surely better then eating Halloween Candy.

Halloween is almost here! I don’t know about anybody else, but in our house Halloween is the best holiday. The boys get so excited, they love Halloween more than Christmas and their birthdays combined. What’s not to like about getting dressed up in your favorite costume and eating tons of yummy candy?

This year Jack and Will are being Ninja Turtles. This is no surprise considering that we eat, sleep and breathe Ninja Turtles. Jack is Leonardo (the leader) and Will is Michelangelo (the party dude).  Annie is going as a pumpkin. Since there is so much Halloween excitement in the air I decided to make this pre-Halloween treat, Candy Corn and Oreo Pretzel Bark.

 Halloween is almost here! We did our pumpkin carving last night so that means we had lots of pumpkin seeds to eat! I love snacking on pumpkin seeds, it’s the reward for getting that pumpkin scooped out and decorated. I also love ranch, and had one extra packet of ranch dressing mix leftover after making this yummy Bacon Ranch Pasta dish this summer.

I figured everything tastes better with Ranch so I decided to roast our pumpkin seeds with the remaining ranch seasoning. And NO surprise here, these Roasted Ranch Pumpkin Seeds were great! I don’t think I’ll ever eat pumpkin seeds without ranch flavoring again. Why haven’t I thought of this sooner?!

Mountain Trip

I hope the world doesn’t stop turning, but this week I’m only doing one post and it will not include one actual recipe. The hubby and I just got back from the North Carolina Mountains where we celebrated our 7th wedding anniversary! We were kid free and enjoyed some quiet time by ourselves and also checked out the River Arts District in Asheville where we strolled through some art galleries and a glass shop.  We also ate lots of good food and drank plenty of tasty local beers. Asheville has a ton of  local, small breweries and we took advantage of trying a few of them out.
