Blueberry Banana Smoothie with Chia Seeds

After about 15 years of refusing to eat a smoothie, I caved! What was my problem?! Why the refusal? Well for one thing when smoothies first became popular I was 20 years old and lets just say that eating right was not on the agenda. I ate horrible food in college, and in the morning I chose to have a 700 calorie caramel mocha-something or other from Starbucks not a healthy smoothie. Fast forward a whole 15 years and here I am! I made this Blueberry Banana Smoothie with Chia Seeds and it knocked my socks off! Wow, what I dummy I’ve been all these years. These things are A-M-A-Z-I-N-G!

This Blueberry Banana Smoothie isn’t unique at all -it’s basic; blueberries, bananas, some low-fat milk with some chia seeds. I made the same smoothie except traded the blueberries for some strawberries, same great result! For those of you that have made smoothies for that last 20 years you may just want to stop reading and check back at the end of the week for another recipe. This past week was a big week for our family. My oldest son Jack started kindergarten {sob!} and my husband finally shaved his beard after 8 long years {hurray!} so to celebrate this momentous week I figured a rich big meal was in order so I made this oh so delicious Spaghetti with Parmesan and Bacon. It’s got bacon in it people! We all know that bacon is one of the all time best foods known to man. Also have you heard??!! Those health food “experts” are now proclaiming that animal fat is actually good for you! So I’m jumping on that bandwagon, until they change their mind in a couple of years. Until then, lets eat!

I had so much fun making these Cinnamon Pretzels. I had intended to bake these up before our vacation and I’m so glad that I waited! First of all they are a little time-consuming. My plan for these was to wake up early and make them for our road trip to NY; my husband and I had packed the van the night before so I figured I could sneak in some time to bake the pretzels, photograph them and then I could write the post from my iPhone while we were at the cottage {no internet connection there!}

Vacation, Memories, and Food

sunset2 I’m back! After two weeks of hard living on the road and a lot of time in a little cottage by  the lake our family is home. We took our annual trip up to New York to see family; both my husband’s family and my extended  family live in upstate NY so we try to make it there to visit. We spent most of our time in a cottage on Owasco lake, but traveled to Rochester and Geneva NY to see my  family and some friends. Most of New York State is really very pretty and surprisingly rural.  We usually vacation on the Finger lakes, a bunch of lakes shaped like fingers.  In the past we’ve stayed at Seneca and Skaneateles lakes, this time around we stayed at Owasco lake. The great thing about these lakes are that they are crystal clear and have rock bottoms. They were formed by glaciers millions of years ago and are also super deep. Down here in North Carolina we have no natural lakes, they are all man made and most of them are muddy and brown. Lets just say that when you stick your feet in them , you sink about a half a foot in the mud and you wonder what the heck is under the water {water moccasins?! eek!}   boys fishing_

This is another one of the awesome all-in-one dinners. And since I got way too many zucchini’s at the grocery store making my zucchini chips, I figured now was a perfect time to cooK this Smoked Sausage and Veggie Stir Fry. This is a modified recipe from my Cooking Light cook book Fresh Foods Fast. I’m a huge fan of Cooking Light and I highly recommend this cook book if you like healthy and fast meals for your family. It’s my fav.

One of the reasons I like this cookbook is that a lot of the time they omit the oil in the recipes and substitute cooking spray which has zero calories. I never thought of doing this before , but a lot of time the food you cook has plenty of flavor on its own and doesn’t need the extra fat and calories that oil adds. I did however managed to sneak a little Olive Oil into this dish, because to me Olive Oil is a health food of sorts. [Read more...]

Get the ranch out and get ready to dunk some crispy zucchini parmesan chips right on in there. These chips are warm, crispy and ready to be devoured. Best part is-they’re healthy and that little bit of cayenne pepper gives these chips the perfect kick! These little zucchini Parmesan chips are the perfect appetizer, they are quick to prepare and after 25 minutes in the oven they’re ready to be gobbled up.

I am a known Ranch addict but I swear , all addictions aside, the ranch dressing really compliments these. The ranch mellows the kick from the red pepper for a perfect spicy yet cooling bite of deliciousness.

In this particular case I’m trying to forgive myself for my weekend sins {too much wine, too many pieces of pizza! Bad Katie!} I figured a nice healthy salad would ease some of my guilt.
