I’m loving this healthy quinoa pea salad! It’s got all the good stuff for you could ask for; roasted nuts, peas, parsley, and some green onions tossed with a sweet honey vinaigrette dressing. The added crunch of the pecans makes this salad extra delish!

I’m pretty sure I will be eating this all week for lunch. I love having a meal like this ready to go. Lunch time is always chaos in our house and by the time I get the kiddos fed, I’m often left scrambling for something healthy to eat, or end up eating the crust of one of the kids PB&J’s {yuck}

These Garlic and Rosemary Smashed Potatoes are so crunchy and satisfying! They do take an hour to make, but let me tell you they are worth the wait. Plus the entire hour is really free time. All that is required of you is boiling some small taters in a pot, then smashing them and throwing them in the oven for half an hour after seasoning them. “Easy Peezy, lemon squeezy” as my kiddos say.

First let’s get to this No-Bake Light Blueberry Pie. It is simply da-vine.  The graham cracker crust goes perfectly with the cream cheese and cool whip filling and the topping of extra crumbled graham crackers with the blueberries makes this one kick ass dessert. And did I mention it’s light?! That’s right, I used Light Graham Crackers, with light butter, light cream cheese, and light cool whip. And we all know that blueberries are THE super food. Every have one of those happy days. the ones where you crank up the music super loud and dance with the kids like an idiot? Or do the same old boring house work with a pep in your step? The days where for one reason or another , you take a second and actually appreciate life? 

I remember feeling this way quite a lot after I was cancer free and knew that I was going to be OKAY. It was such a great feeling , that unfortunately doesn’t come around as often. You get back to taking each day for granted and forgetting that each day is really, truly A GIFT.

When that happy to feeling comes along you’ve just got to soak it up. Today was one of those days; and I’m soaking it up.  Still have the same daily stressors but for some reason they don’t seem to matter…I’m sure tomorrow will be another story! To celebrate my happy day I made these baked Rosemary Chickpeas.

These low-fat Caramel and Dark Chocolate Brownies will melt in your mouth! A perfect and easy sweet treat that everyone will love. 

Low-Fat Caramel and Dark Chocolate Brownies This week I’m bringing the Sweet back to Sweet and DelishLow-fat Caramel Brownies are the perfect dessert for both Mom and the kids. I loaded these brownies with dark chocolate {for me} and drizzled on the rich caramel {for me and the kids}. Boy, oh boy, did it turn out fabulous. These brownies are great because they use a box mix, and have some lower fat ingredients so you don’t have to feel completely guilt-ridden eating them. Simply use a Pillsbury Devils food Cake Mix with Pudding, some fat-free or low-fat condensed milk, some caramel candies, and your choice of two Dark Chocolate bars. Bacon Ranch Pasta Salad

Yeah , I know, bacon again. For two weeks straight I’ve had bacon on the brain…and this time around I added RANCH. Ah Ranch, how do I love thee so? Let me count the ways..oh wait I know, I love ranch because it is AMAZING! So meet this Bacon Ranch Pasta Salad, you’ll be glad you did. This pasta salad is loaded with bacon, green onions, light sour cream and ranch. 

I used Orzo for the pasta; it’s different then the same old, same old boring macaroni. I also like my orzo to be a little al dente so I cook it a few minutes short of the recommended cook time, about 6 minutes or so.  While your pasta is cooking fry up that yummy bacon. There is nothing better than walking into a house that smells of pure BACON. Who needs a Vanilla Glade Plugin when you have bacon cooking? Maybe Glade should look into a Bacon scented plugin; I’d buy it :-)

Blueberry Banana Smoothie with Chia Seeds

After about 15 years of refusing to eat a smoothie, I caved! What was my problem?! Why the refusal? Well for one thing when smoothies first became popular I was 20 years old and lets just say that eating right was not on the agenda. I ate horrible food in college, and in the morning I chose to have a 700 calorie caramel mocha-something or other from Starbucks not a healthy smoothie. Fast forward a whole 15 years and here I am! I made this Blueberry Banana Smoothie with Chia Seeds and it knocked my socks off! Wow, what I dummy I’ve been all these years. These things are A-M-A-Z-I-N-G!

This Blueberry Banana Smoothie isn’t unique at all -it’s basic; blueberries, bananas, some low-fat milk with some chia seeds. I made the same smoothie except traded the blueberries for some strawberries, same great result! For those of you that have made smoothies for that last 20 years you may just want to stop reading and check back at the end of the week for another recipe.
