Candy Corn and Oreo Pretzel Bark

A super sweet Halloween treat, Candy Corn and Oreo Pretzel Bark. A combination of all your favorite sweets!

Halloween Bark-7
Halloween is almost here! I don’t know about anybody else, but in our house Halloween is the best holiday. The boys get so excited, they love Halloween more than Christmas and their birthdays combined. What’s not to like about getting dressed up in your favorite costume and eating tons of yummy candy?

This year Jack and Will are being Ninja Turtles. This is no surprise considering that we eat, sleep and breathe Ninja Turtles. Jack is Leonardo (the leader) and Will is Michelangelo (the party dude).  Annie is going as a pumpkin. Since there is so much Halloween excitement in the air I decided to make this pre-Halloween treat, Candy Corn and Oreo Pretzel Bark.

Roasted Ranch Pumpkin Seeds

Roasted Ranch Pumpkin Seeds, the perfect Halloween snack! Seasoned with Ranch seasoning, salt, and olive oil.

Roasted Ranch Pumpkin Seeds

Halloween is almost here! We did our pumpkin carving last night so that means we had lots of pumpkin seeds to eat! I love snacking on pumpkin seeds, it’s the reward for getting that pumpkin scooped out and decorated. I also love ranch, and had one extra packet of ranch dressing mix leftover after making this yummy Bacon Ranch Pasta dish this summer.

I figured everything tastes better with Ranch so I decided to roast our pumpkin seeds with the remaining ranch seasoning. And NO surprise here, these Roasted Ranch Pumpkin Seeds were great! I don’t think I’ll ever eat pumpkin seeds without ranch flavoring again. Why haven’t I thought of this sooner?!

Mountain Trip

Mountain Trip10

I hope the world doesn’t stop turning, but this week I’m only doing one post and it will not include one actual recipe. The hubby and I just got back from the North Carolina Mountains where we celebrated our 7th wedding anniversary! We were kid free and enjoyed some quiet time by ourselves and also checked out the River Arts District in Asheville where we strolled through some art galleries and a glass shop.  We also ate lots of good food and drank plenty of tasty local beers. Asheville has a ton of  local, small breweries and we took advantage of trying a few of them out.

creamy low-fat potato soup

I dreamed up this soup while waiting at the bus stop in the cold rain at 6:30 in the morning. Yes 6:30! school starts crazy early here, which works for us because we are early birds. I could do without the cold rain though..

Shivering and wet, I was thinking about how cold rainy days are perfect days for soup. I’ve been on a roll with the soup recipes lately, I just can’t stop myself. Now that fall is officially here I feel the need to cook as many cold weather foods as I can, and this Creamy Low-fat Potato Soup is the perfect cold weather meal. And it tastes even better the next day for leftovers..amazingly flavorfully delicious.

Chocolate Chip Pumpkin Bread

Rich Chocolate Chip Pumpkin Bread with a honey cream cheese filling, topped with cinnamon & sugar pecans. No spread needed for this sweet breakfast treat!

Chocolate Chip Pumpkin Bread

I made this Chocolate Chip Pumpkin Bread after getting reamed out today.  It was my therapy bread. And man, it sure did the trick; so rich, chocolatey and creamy!   I suppose I deserved to get yelled at. It just hasn’t happened in a while.  I’m the one doing the yelling these days… I’m not on the receiving end.

So what happened you might ask? Illegal trespassing guys. I know, bad ass right?

I had just dropped my son off at preschool and I figured Annie and I could go check out this lake down the road. I have been thinking about taking some pictures of the kids so I’ve been scouting out pretty spots. I found this cool area in a neighborhood with a little parking lot and a trail down to the lake. And yes there was a sign that said NO TRESPASSING [Read more...]

chicken and sausgae casserole

There’s a chill in the air so it’s time to start bustin out some casseroles. Get your sweatpants ready cause this one is a doozy. It’s not low-fat but it sure is tasty! I am a big fan of the 80/20 rule and this casserole definitely falls in that sinful 20% part of your diet…in fact wash this down with a cold beer like I did and you’ve used up all your points for the week. But This Chicken and Sausage Rice Casserole is soo worth it.

Low-fat Creamy Tomato Soup

Low-fat Creamy Tomato Soup; the perfect side dish or meal to warm you up on a cold fall or winter day. Made with low sodium tomatoes, vegetable juice, low fat milk, and cream cheese.

creamy tomato soup Two things happened this weekend that haven’t happened in a long, long time. I got to turn on the heat! And man was in cold for my southern wimpy bones. 39 degrees…whaaat? It’s just barely fall and we are already approaching freezing?!

Around here there doesn’t seem to be much open-window time. It goes from winter to summer in one week and then from summer to fall super fast. Which is fine by me.  I love the smell of the heat when it hasn’t been turned on for 8 months, it’s like something’s burning..but you know it’s not the house catching on fire. Just the smell of breaking in the heater. [Read more...]

Egg White Delight Copycat

McDonalds ain’t the only place in town that can throw some eggs whites in a pan with a piece of cheese and a slice of Canadian Bacon. You can come to mi casa too for this yummy Egg White Delight Copycat!

eggwhite delight Like many, I have a love hate relationship with the Golden Arches. The food is good, in a really gross way if ya know what I mean? I try my best to treat my body good and most of the time I do. But when I’m living life old-school college style or on the road you’ll find me at McDonald’s scarfing down an egg sandwich {a sure cure for a hangover} or on a road trip from hell with the kids shoveling down some fries {helps block out the blood-curdling screams coming from the back}

Luckily for my rapidly aging body me I only get out to party with my lady friends once a year, and when I do find myself at McDonald’s for breakfast I order this egg white delight and lose some of the guilt. You get the comfort of an egg sandwich without all the calories.  [Read more...]

Home-made chicken and rice soup

With fall being officially upon us it’s time to start thinking about those warm comforting meals that we miss out on in the summer and spring seasons. Homemade Chicken Soup with Rice is one of those perfect fall and winter foods. Plus it’s awesome because you make it from scratch and there’s a certain satisfaction in that! This recipe is really more of a guideline , not an actually set in stone recipe. Homemade Chicken Soup With Rice is what you make it, you can experiment a little and not worry at all. It will come out great. Promise.

Before we get started please admire my steamy picture of this soup. I burned the crap out of my hands several times while trying to get this shot. It took over an hour and I had to try several different methods to get it right. Plus soup is one of the hardest foods to take flattering pictures of and will be the 1st topic up for discussion in my Photography Forum. Look for that post mid October. ..now back to making the soup.. [Read more...]
